It is finally getting cool enough for scarves and sweaters, soups and stews, and everything cozy! These are a staple in our house and are perfect for having friends over for coffee or tea. Enjoy!
Preheat oven to 350
2 eggs
1/4 cup olive oil
1/2 cup honey
1/2 cup applesauce
1 cup mashed pumpkin
Combine in bowl then add
2 cups Gluten Free Flour or regular flour
1 tbls arrowroot powder (only for gluten free)
2 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/2 tsp all spice
1/8 tsp salt
Oil muffin tins (these work better without cupcake liners) bake for 20 minutes rotating once. Let cool in pan. Enjoy!
